Our Why + Vegan, Paleo Banana Chocolate Chip Muffins

Here’s the deal: you are busy, I am busy, and my goal is to post recipes and information to get the most reluctant person and the old pros alike in and out of the kitchen as fast as possible with nourishing food on their plates. Why? Because time is the single biggest reason people do not do their own cooking. To leave your dietary needs to the food industry is to hand over your health to corporations who do not care about you or the environmental impacts left by growing and processing foods in mass, conventional ways. Plus, if you care about open spaces, the environmental crisis on our hands, and your performance potential, this space is for you. Food is medicine. Food can heal. Food and lifestyle can address 99% of what other health professionals use prescriptions to treat. Food is what our bodies know better than anything. Food is community and family connections. Most of all, the way food is grown has an impact on your health and the environment. We all have to eat. Let’s use food as a platform to create and internal and external shift for the best, a revolution to be exact.

Paleo banana muffins, recipe handed to me by my gifted Aunt Linda.

I do not subscribe to any one diet. Balanced, healthy, and sustainable are my bottom line. This recipe is fast and will maintain healthy blood sugar levels. It is also environmentally sustainable. Why? Because you are cooking at home and you are in charge of all the ingredients. Additionally the EPA reports that food waste accounts for the largest percentage of waste going to municipal landfills. That is in large part waste generated by eating establishments outside of the home. I make a double batch. Takes the same amount of time and you get twice as much food.

  • 2 Medium Bananas

  • 1/2 C Pure Maple Syrup

  • 4 TBS Flax Egg Replacement

  • 1/2 C Coconut Oil

  • 2 C Almond Flour

  • 6 TBS Coconut Flour

  • 2 tsp Sea Salt

  • 2 tsp Baking Soda

  • 1 Handful of Dairy Free Chocolate Chips

Bake at 350 for 30 min or until done. Move to a wire rack.

Enjoy, they are delicious. If you have a family, your kids will love them too!
